“Growing up on my mothers regular home-cooked meals and wonderful cooking of my Vietnamese grandmother inspired an early interest in food and dining. I had, however, never thought much about cooking professionally. Many summers ago, I took a job washing dishes at a restaurant. Immediately I was drawn to the work of a professional kitchen. My path has taken many routes over my career including several years as a sushi chef. I eventually went to San Francisco to pursue a higher level of cooking. It was there that I was introduced to true seasonal cooking by way of California cuisine and also fell in love with Italian food. This love pointed me to the source itself: Italy. Here I have worked all around the country as I continue to work towards the goal of my own restaurant. I believe in being inspired by the seasonal flavors and colors and local markets. The traditions of gathering for food is a fascinating aspect of humanity that, myself as a chef, respect greatly. “
